Prick bottom with fork. Line with parchment and fill with pie weights or dried beans. Bake for 15 minutes. Remove weights and parchment, bake 5 more minutes. Let cool slightly.
  3. Reduce oven temperature to 350°F (175°C). In a large bowl, whisk eggs, cream, salt, pepper, and nutmeg until smooth.
  4. Sprinkle half the cheese over the crust. Add any optional fillings (bacon, mushrooms, etc.) evenly. Pour egg mixture over fillings. Top with remaining cheese.
  5. Bake for 35-40 minutes until center is set and top is golden. Let cool for 10 minutes before slicing. Serve warm or at room temperature.
