  1. Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish, crimp edges, and line with parchment paper. Fill with pie weights or dried beans. Blind bake for 15 minutes. Remove weights and parchment, bake 5 more minutes until lightly golden. Set aside.
  2. In a skillet over medium heat, cook bacon until crisp. Drain on paper towels.
  3. In a medium bowl, whisk together heavy cream, milk, eggs, salt, pepper, and nutmeg until smooth.
  4. Sprinkle half of the cheese over the bottom of the pre-baked crust. Top with bacon. Pour the egg mixture over the filling. Sprinkle remaining cheese on top.
  5. Bake at 375°F for 35-40 minutes, until the center is set and a knife inserted near the center comes out clean. Let cool for 10 minutes before slicing.
