A classic Mexican melted cheese dip with spicy chorizo, perfect for dipping with warm tortillas or chips.

Ingredients
8 oz fresh Mexican chorizo, casing removed
1/2 small onion, finely chopped
2 cloves garlic, minced
8 oz shredded Oaxaca cheese (or mozzarella)
4 oz shredded Chihuahua cheese (or Monterey Jack)
2 tbsp chopped fresh cilantro
Warm corn tortillas or tortilla chips for serving
Instructions
Cook chorizo in a skillet over medium-high heat, breaking it up, until browned and cooked through, about 5 minutes. Remove with a slotted spoon and set aside, leaving about 1 tbsp drippings in the pan.
Add onion to the skillet and cook until softened, about 3 minutes. Add garlic and cook 1 minute more.
Reduce heat to low. Add both cheeses and stir constantly until melted and smooth, about 3-4 minutes.
Stir in cooked chorizo and cilantro. Serve immediately with warm tortillas or chips.
Tips
For a spicier version, add a minced jalapeño with the onion.
Queso fundido can be kept warm in a small slow cooker on low for up to 1 hour.
Leftovers can be reheated gently on the stovetop or microwave.
