Ingredients
- 8 small flour tortillas (6-inch)
- 2 cups shredded Monterey Jack or cheddar cheese
- 1 cup cooked shredded chicken (optional)
- 1/2 cup black beans, drained and rinsed (optional)
- 1/4 cup chopped fresh cilantro (optional)
- 1 jalapeño, thinly sliced (optional)
- 2 tablespoons butter or oil for cooking
- Sour cream and salsa for serving
Instructions
- Lay out 4 tortillas on a work surface. Evenly distribute cheese over each, leaving a small border. Add any optional fillings on top of the cheese.
- Place the remaining 4 tortillas on top to form sandwiches.
- Heat a large skillet or griddle over medium heat. Add a little butter or oil.
- Carefully transfer one quesadilla to the skillet. Cook until golden brown on the bottom, about 2-3 minutes.
- Flip and cook until the other side is golden and the cheese is melted, about 2 minutes more.
- Repeat with remaining quesadillas. Cut into wedges and serve with sour cream and salsa.
