Ingredients
4 large flour tortillas
2 cups shredded Monterey Jack or cheddar cheese
2 ripe avocados
1 small tomato, diced
1/4 cup finely chopped onion
2 tablespoons chopped fresh cilantro
1 jalapeño, seeded and minced (optional)
2 tablespoons lime juice
Salt to taste
1/2 cup sour cream
Instructions
Make guacamole: Halve avocados, remove pit, and scoop flesh into a bowl. Mash with a fork to desired consistency. Stir in tomato, onion, cilantro, jalapeño, lime juice, and salt. Set aside.
Heat a large non-stick skillet over medium heat. Place one tortilla in the skillet. Sprinkle half the cheese evenly over the tortilla. Place another tortilla on top. Cook until bottom is golden brown, about 2-3 minutes.
Carefully flip the quesadilla and cook until the other side is golden and cheese is melted, about 2 minutes more. Repeat with remaining tortillas and cheese.
Cut each quesadilla into wedges. Serve with guacamole and sour cream.
Tips
For extra flavor, add cooked chicken or black beans to the quesadilla.
Use a panini press for even browning.
Store leftover guacamole with plastic wrap pressed directly on the surface to prevent browning.
