Ingredients
8 flour tortillas (8-inch)
2 cups shredded Oaxaca cheese or mozzarella
1 cup cooked shredded chicken (optional)
1/2 cup salsa verde
1/4 cup heavy cream
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
1/2 cup crema or sour cream

Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, mix salsa verde with heavy cream to make a creamy salsa.
Place 4 tortillas on a work surface. Divide Oaxaca cheese evenly among them, leaving a border. Add chicken if using. Drizzle 1 tablespoon creamy salsa over each. Top with remaining tortillas.
Heat a large skillet over medium heat. Cook each quesadilla for 2-3 minutes per side until golden and cheese melts. Transfer to baking sheet.
Once all quesadillas are cooked, top each with Monterey Jack cheese and bake for 3-4 minutes until cheese is bubbly.
Cut into wedges, drizzle with remaining creamy salsa and crema, and garnish with cilantro.
Tips
For a vegetarian version, omit chicken and add black beans or sauteed mushrooms.
Serve with a side of refried beans or Mexican rice.
If you don't have Oaxaca cheese, use a mix of mozzarella and Monterey Jack.
