Ingredients
4 large flour tortillas (8-inch)
2 cups shredded Oaxaca cheese (or mozzarella)
Butter or oil for cooking
Instructions
Heat a large skillet or griddle over medium heat. Lightly butter or oil the surface.
Place one tortilla in the skillet. Sprinkle half the cheese evenly over the tortilla, leaving a small border around the edge.
Top with a second tortilla. Cook until the bottom is golden brown and the cheese begins to melt, about 2-3 minutes.
Carefully flip the quesadilla using a spatula. Cook until the second side is golden brown and the cheese is fully melted, another 2-3 minutes.
Repeat with remaining tortillas and cheese.
Transfer to a cutting board, let cool for 1 minute, then cut into wedges. Serve immediately.

For extra flavor, add cooked chorizo, refried beans, or sliced jalapeños before adding the cheese.
