Ingredients
1 lb ground beef
1/2 onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
2 cups shredded Monterey Jack or cheddar cheese
8 large flour tortillas
2 tbsp vegetable oil
Instructions
In a skillet over medium-high heat, cook the ground beef with onion and garlic until beef is browned and onion is soft. Drain excess fat.
Stir in cumin, chili powder, salt, and pepper. Cook for 1 minute. Remove from heat.
Lay 4 tortillas on a flat surface. Divide the beef mixture evenly among them, spreading to cover. Top each with 1/2 cup cheese. Place remaining tortillas on top.
Heat 1/2 tbsp oil in a large skillet over medium heat. Cook one quesadilla at a time, about 2-3 minutes per side, until golden brown and cheese is melted. Add more oil as needed.
Cut each quesadilla into wedges and serve hot.
Tips
Serve with sour cream, salsa, and guacamole.
For extra flavor, add diced jalapeños or bell peppers to the beef mixture.
