Ingredients
1 lb flank steak or skirt steak
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp ground cumin
1 tsp chili powder
8 large flour tortillas
2 cups shredded Monterey Jack cheese
1 cup pico de gallo or fresh salsa
1/2 cup sour cream
1/4 cup chopped fresh cilantro
Instructions
Season the steak with olive oil, salt, pepper, cumin, and chili powder. Let marinate for 10 minutes.
Grill or pan-sear the steak over high heat for 4-5 minutes per side for medium-rare. Let rest for 5 minutes, then slice thinly against the grain.
Place a tortilla on a flat surface. Sprinkle 1/4 cup cheese over half of the tortilla. Top with sliced steak, a spoonful of pico de gallo, and a sprinkle of cilantro. Fold the other half over to close.
Repeat with remaining tortillas and filling.
Heat a large skillet or griddle over medium heat. Cook each quesadilla for 2-3 minutes per side, until golden brown and cheese is melted.
Cut into wedges and serve with sour cream and extra salsa.
