Ingredients
2 tablespoons unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 can (15 oz) pumpkin puree
4 cups chicken or vegetable broth
1/2 cup heavy cream
Salt and black pepper to taste
Optional: toasted pumpkin seeds for garnish
Instructions
In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic, ginger, cinnamon, and nutmeg; cook for 1 minute until fragrant.
Stir in pumpkin puree and broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
Remove from heat. Use an immersion blender to puree until smooth. (Alternatively, blend in batches in a stand blender.)
Stir in heavy cream. Season with salt and pepper to taste. Reheat gently if needed.
Ladle into bowls and garnish with pumpkin seeds if desired.
