1 tbsp coconut oil
1 medium onion, diced
3 cloves garlic, minced
1 tbsp grated fresh ginger
2 tbsp curry powder
1 tsp ground cumin
1/2 tsp ground turmeric
1/4 tsp cayenne pepper (optional)
1 can (15 oz) pumpkin puree
1 can (13.5 oz) full-fat coconut milk
1 cup vegetable broth
1 tbsp maple syrup or brown sugar
Salt to taste

Instructions
Heat coconut oil in a large skillet or pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in curry powder, cumin, turmeric, and cayenne (if using). Cook for 1 minute to toast spices.
Add pumpkin puree, coconut milk, vegetable broth, and maple syrup. Stir to combine.
Bring to a simmer, then reduce heat to low. Cook for 15-20 minutes, stirring occasionally, until thickened and flavors meld.
Season with salt to taste. Serve over rice or with naan, garnished with cilantro.
