  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Stir in chicken broth, orange juice, lime juice, chili powder, cumin, smoked paprika, salt, and pepper. Return pork to pot, bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, until pork is fork-tender.
  4. Remove pork from pot and shred with two forks. Return shredded pork to the pot and stir to coat with cooking liquid. Keep warm.
  5. Warm tortillas in a dry skillet or directly over a gas flame. Fill each tortilla with pulled pork, then top with cilantro, diced onion, and queso fresco. Serve with lime wedges.
