Ingredients
3 lbs pork shoulder (bone-in or boneless)
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1 cup apple cider vinegar
1/2 cup ketchup
1/4 cup brown sugar
1 tbsp Worcestershire sauce
12 slider buns
2 cups coleslaw mix (shredded cabbage and carrots)
1/2 cup mayonnaise
1 tbsp apple cider vinegar
1 tsp sugar
Instructions
Mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub all over pork shoulder.
Place pork in a slow cooker. Combine apple cider vinegar, ketchup, brown sugar, and Worcestershire sauce; pour over pork.
Cook on low for 8 hours or high for 4-5 hours until pork is fork-tender.
Remove pork from slow cooker; shred with two forks. Discard bone if present. Return shredded pork to the sauce in the slow cooker and keep warm.
Make coleslaw: In a bowl, combine coleslaw mix, mayonnaise, 1 tbsp apple cider vinegar, and sugar. Mix well and refrigerate until serving.
Toast slider buns if desired. Place a generous portion of pulled pork on each bun bottom, top with coleslaw, and cover with bun top. Serve immediately.
Tips
Leftover pulled pork can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
For extra flavor, sear the pork shoulder in a hot skillet before adding to the slow cooker.
Adjust the amount of barbecue sauce to your preference.
