Ingredients
2 lbs boneless, skinless chicken thighs
1 cup barbecue sauce
1/4 cup apple cider vinegar
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
12 slider buns
1 cup coleslaw mix (optional)
Instructions
Place chicken thighs in a slow cooker. In a small bowl, whisk together barbecue sauce, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, salt, and pepper. Pour over chicken.
Cover and cook on low for 3-4 hours or high for 1.5-2 hours, until chicken is tender and shreds easily.
Remove chicken from slow cooker and shred with two forks. Return shredded chicken to the slow cooker and stir to coat with sauce. Let sit for 10 minutes to absorb flavors.
Toast slider buns if desired. Place a generous portion of pulled chicken on each bun bottom. Top with coleslaw if using, then cover with bun tops. Serve immediately.
