Ingredients
1 (3.4 oz) package instant vanilla pudding mix
2 cups cold whole milk
1/2 cup heavy cream
1/4 cup granulated sugar
1 teaspoon vanilla extract
Instructions
In a medium bowl, whisk together the pudding mix and sugar. Add the milk and heavy cream, then whisk vigorously for 2 minutes until the mixture thickens.
Stir in the vanilla extract until well combined.
Pour the pudding mixture into 8 (3-ounce) popsicle molds, dividing evenly. Insert sticks and freeze until solid, at least 4 hours or overnight.
To unmold, run the molds under warm water for a few seconds until the pops release easily.
Tips
Substitute chocolate or butterscotch pudding for a different flavor.
For extra creaminess, use half-and-half instead of milk.
Store pops in the freezer in a sealed bag for up to 2 weeks.
