Ingredients
1 1/2 cups warm water (110°F)
1 tablespoon sugar
2 teaspoons active dry yeast
4 cups all-purpose flour
2 teaspoons salt
2 tablespoons unsalted butter, melted
8 hot dogs
1/2 cup baking soda
1 large egg, beaten
Coarse sea salt, for topping
Instructions
In a small bowl, combine warm water, sugar, and yeast. Let stand 5 minutes until foamy.
In a large bowl, mix flour and salt. Add yeast mixture and melted butter; stir until dough forms. Knead on floured surface 5 minutes until smooth. Place in greased bowl, cover, let rise 30 minutes.
Preheat oven to 400°F. Line two baking sheets with parchment paper.
Punch down dough. Divide into 8 equal pieces. Roll each into a 20-inch rope.
Wrap each rope around a hot dog, pinching ends to seal.
Bring 10 cups water and baking soda to a boil in a large pot. Boil each pretzel dog for 30 seconds, then transfer to prepared baking sheets.
Brush each with beaten egg and sprinkle with coarse salt.
Bake 15-18 minutes until deep golden brown. Cool slightly before serving.
