  2. In a large heavy-bottomed saucepan, combine granulated sugar, brown sugar, evaporated milk, butter, and salt. Cook over medium heat, stirring constantly, until the butter melts and the sugars dissolve.
  3. Bring the mixture to a boil, then reduce heat to medium-low. Continue to cook, stirring occasionally, until the mixture reaches the soft-ball stage (235-240°F on a candy thermometer). This takes about 10-12 minutes.
  4. Remove from heat. Stir in pecans and vanilla extract. Beat the mixture vigorously with a wooden spoon until it thickens and becomes slightly cloudy, about 2-3 minutes.
  5. Working quickly, drop heaping tablespoonfuls of the mixture onto the prepared baking sheets. Let cool completely at room temperature until set, about 30 minutes.
  6. Store pralines in an airtight container at room temperature for up to 2 weeks.
