Ingredients
4 large sweet potatoes, cut into 1/2-inch thick fries
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 cup all-purpose flour
1/4 cup unsalted butter
2 cups beef or vegetable broth
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1 cup cheese curds (or fresh mozzarella pearls)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato fries with olive oil, salt, pepper, and garlic powder until evenly coated.
Spread fries in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
Meanwhile, make the gravy: In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until golden.
Gradually whisk in broth, soy sauce, and Worcestershire sauce. Bring to a simmer, stirring constantly, until thickened, about 5 minutes. Season with salt and pepper to taste.
To serve, divide hot fries among plates. Top with cheese curds and pour hot gravy over the top. Serve immediately.
Tips
For extra crispy fries, soak cut sweet potatoes in cold water for 30 minutes before baking.
If cheese curds are unavailable, use fresh mozzarella pearls or diced cheddar.
To keep fries crispy, serve immediately after adding gravy.
