Ingredients
4 tablespoons unsalted butter
1 large onion, chopped
2 cloves garlic, minced
4 cups peeled and diced potatoes (about 2 lbs)
4 cups chicken or vegetable broth
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried thyme
1/4 cup chopped fresh chives or parsley for garnish
Instructions
In a large pot, melt butter over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer to a blender in batches and blend until smooth, then return to pot.
Stir in heavy cream, salt, pepper, and thyme. Heat through, but do not boil.
Ladle into bowls and garnish with chives or parsley.
Tips
For a thicker soup, mash some of the potatoes before blending.
Store leftovers in the refrigerator for up to 3 days. Reheat gently on the stovetop.
