  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce several times with a fork.
  2. Bake potatoes directly on oven rack for 50-60 minutes until tender. Let cool slightly.
  3. Cut each potato in half lengthwise. Scoop out flesh, leaving about 1/4-inch thick shell. Reserve flesh for another use.
  4. Brush potato skins inside and out with olive oil. Season with salt and pepper.
  5. Place skins cut-side up on a baking sheet. Bake at 400°F for 10 minutes, then flip and bake another 10 minutes until crisp.
  6. Flip skins cut-side up again. Sprinkle cheese and bacon inside each skin.
  7. Bake 5-7 minutes until cheese is melted and bubbly.
  8. Top each skin with a dollop of sour cream and sprinkle with green onions. Serve hot.
