Ingredients
2 large russet potatoes (about 1.5 lbs)
Vegetable oil, for frying (about 4 cups)

Instructions
Scrub potatoes and slice very thinly using a mandoline or sharp knife (about 1/16 inch thick). Place slices in a large bowl of cold water and soak for 30 minutes to remove excess starch.
Drain potatoes and pat thoroughly dry with paper towels.
In a large heavy pot or Dutch oven, heat 2 inches of oil to 350°F (175°C).
Working in batches, fry potato slices in a single layer, stirring occasionally, until golden brown and crisp, about 3-5 minutes per batch.
Transfer chips to a paper towel-lined baking sheet and immediately season with salt. Let cool completely before serving.
