Ingredients
- 1 (2-2.5 lb) porterhouse steak, about 1.5 inches thick
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons unsalted butter
- 2 sprigs fresh rosemary
- 2 cloves garlic, smashed
Instructions
- Remove steak from refrigerator 30 minutes before cooking. Pat dry with paper towels.
- Season generously on all sides with salt and pepper.
- Preheat oven to 400°F (200°C).
- Heat a heavy oven-safe skillet (cast iron) over high heat until smoking. Add steak and sear for 3 minutes without moving.
- Flip steak and add butter, rosemary, and garlic to the pan. Tilt pan and spoon melted butter over steak for 1 minute.
- Transfer skillet to oven and roast for 8-10 minutes for medium-rare (125°F internal), or to desired doneness.
- Remove from oven, tent loosely with foil, and rest for 5 minutes before slicing against the grain.
- Slice steak off the bone and divide between two plates. Spoon pan juices over top.
