Ingredients
4 large portabella mushroom caps, stems removed
1/4 cup balsamic vinegar
3 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon black pepper
1/4 teaspoon salt
Instructions
In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, soy sauce, thyme, rosemary, black pepper, and salt.
Place mushroom caps in a shallow dish or resealable bag. Pour marinade over mushrooms, turning to coat. Marinate at room temperature for 15-30 minutes, or refrigerate up to 2 hours.
Preheat grill or large skillet over medium-high heat. Lightly oil the grill grates or skillet.
Grill or pan-sear mushrooms for 4-5 minutes per side, basting with remaining marinade, until tender and nicely charred.
Serve immediately as a main dish with your favorite sides.
Tips
For extra flavor, add a splash of liquid smoke to the marinade.
Serve on a bun with lettuce, tomato, and vegan mayo for a delicious burger.
