Ingredients
- 4 bone-in pork steaks (about 1 inch thick)
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, smashed
Instructions
- Pat pork steaks dry with paper towels. Season evenly on both sides with salt, pepper, garlic powder, thyme, and paprika.
- Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.
- Place pork steaks in the skillet in a single layer. Cook without moving for 4-5 minutes, until a deep golden crust forms.
- Flip steaks and add butter and smashed garlic to the pan. Cook for another 4-5 minutes, basting the steaks with melted butter and garlic.
- Reduce heat to medium and continue cooking until internal temperature reaches 145°F (63°C) for medium, about 2-3 more minutes.
- Transfer steaks to a plate, tent with foil, and let rest for 5 minutes before serving. Spoon pan juices over the top.
Tips
- For extra flavor, marinate the pork steaks in olive oil, garlic, and herbs for 2-4 hours before cooking.
- Serve with mashed potatoes or a crisp green salad.
- Leftover pork steaks can be sliced and used in sandwiches or salads.
