  3. Place onion, carrots, and celery in a roasting pan. Set pork on top, skin side up. Pour chicken broth into the pan, not over the skin.
  4. Roast at 450°F for 20 minutes to start crackling, then reduce oven to 325°F (160°C). Continue roasting until internal temperature reaches 145°F (63°C), about 1 hour 40 minutes more.
  5. Remove from oven, tent with foil, and let rest 15-20 minutes before slicing. Serve with pan juices.
