Ingredients
3 lb boneless pork shoulder or loin roast
2 tsp salt
1 tsp black pepper
2 tbsp olive oil
1 large onion, sliced
4 cloves garlic, minced
1 cup chicken broth
1 tsp dried thyme
1 tsp dried rosemary
4 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and chopped
1/2 cup water
2 tbsp lemon juice
1/4 cup granulated sugar (optional, to taste)
1/2 tsp ground cinnamon
Instructions
Preheat oven to 325°F (165°C). Pat pork roast dry with paper towels and season all over with salt and pepper.
Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 4 minutes per side. Transfer to a plate.
Add sliced onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Pour in chicken broth, scraping up any browned bits. Stir in thyme and rosemary. Return pork to the pot, cover, and transfer to the oven. Roast for 1.5 to 2 hours, until fork-tender.
While pork roasts, make the applesauce: Combine chopped apples, water, lemon juice, sugar (if using), and cinnamon in a medium saucepan. Bring to a boil, then reduce heat and simmer, stirring occasionally, until apples are soft and broken down, about 20 minutes.
Mash the apples with a potato masher or blend with an immersion blender for a smoother sauce. Adjust sweetness to taste. Keep warm.
Remove pork from oven and let rest for 10 minutes before slicing. Serve sliced pork with applesauce on the side.
Tips
For a crispier crust, uncover the roast during the last 20 minutes of cooking.
Leftover pork is great in sandwiches or salads.
Applesauce can be made up to 3 days ahead and refrigerated.
