  1. Preheat oven to 325°F (160°C). Pat pork dry and season with salt and pepper.
  2. Heat oil in a Dutch oven over medium-high heat. Sear pork on all sides until browned, about 4 minutes per side. Remove and set aside.
  3. Reduce heat to medium. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute.
  4. Stir in tomato paste, then add wine (or broth) and scrape up any browned bits. Bring to a simmer.
  5. Return pork to pot. Add broth, thyme, and bay leaves. Cover and transfer to oven. Cook for 2.5 to 3 hours, until pork is fork-tender.
  6. Remove pork and let rest 10 minutes. Discard bay leaves and thyme. Skim fat from sauce if desired. Shred pork or slice, and serve with vegetables and sauce.
