Ingredients
4 pork loin steaks, about 1 inch thick
1/2 cup unsalted butter, softened
2 tablespoons fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 tablespoon fresh thyme leaves
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
In a small bowl, combine softened butter, parsley, chives, thyme, garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Mix until well blended. Set aside.
Pat pork steaks dry with paper towels. Season both sides with remaining 1/4 teaspoon salt and 1/8 teaspoon pepper.
Heat olive oil in a large skillet over medium-high heat. Add pork steaks and cook for 4-5 minutes per side, until golden brown and internal temperature reaches 145°F.
Remove skillet from heat. Top each steak with a generous dollop of herb butter. Let rest for 3 minutes to allow butter to melt and juices to redistribute.
Serve steaks with melted herb butter spooned over the top.

For best results, bring pork steaks to room temperature before cooking.
Leftover herb butter can be rolled in parchment paper and refrigerated for up to a week, or frozen for longer storage.
