Ingredients
- 1 (2-3 pound) boneless pork loin roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh sage, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine or chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, combine olive oil, garlic, rosemary, thyme, sage, salt, and pepper to make a paste.
- Pat the pork loin dry with paper towels. Rub the herb paste all over the pork.
- Place the pork loin fat side up in a roasting pan. Pour the wine or broth into the bottom of the pan.
- Roast for 45-60 minutes, or until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.
- Remove from oven and let rest for 10 minutes before slicing. Serve with pan juices.
