This quick and easy pork and vegetable stir-fry is a perfect weeknight dinner, featuring tender pork strips and colorful vegetables in a savory sauce.

Ingredients
1 lb pork tenderloin, thinly sliced
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium carrot, julienned
1 cup broccoli florets
2 cloves garlic, minced
1 teaspoon grated fresh ginger
3 tablespoons oyster sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 cup water
Instructions
In a bowl, combine sliced pork with soy sauce and cornstarch; toss to coat and set aside for 10 minutes.
Heat vegetable oil in a wok or large skillet over high heat. Add pork and stir-fry until browned, about 2-3 minutes. Remove pork and set aside.
In the same wok, add bell peppers, carrot, and broccoli. Stir-fry for 2 minutes until crisp-tender.
Add garlic and ginger; stir-fry for 30 seconds until fragrant.
Return pork to the wok. Add oyster sauce, rice vinegar, sesame oil, and water. Stir-fry for 1-2 minutes until sauce thickens and everything is well coated.
Serve immediately over steamed rice.
Tips
For extra heat, add a sliced red chili or a dash of chili flakes.
Substitute pork with chicken or beef if desired.
