- 4 cups chicken broth

- 1 teaspoon paprika
- 1 bay leaf
- 4 medium potatoes, peeled and cubed
- 2 carrots, sliced
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Season pork cubes with salt and pepper. Heat oil in a large pot over medium-high heat and brown pork in batches, about 5 minutes per batch. Set aside.
- Reduce heat to medium, add onion and garlic, and cook until softened, about 3 minutes.
- Stir in flour and cook for 1 minute. Gradually whisk in chicken broth, scraping up any browned bits.
- Return pork to pot. Add thyme, paprika, and bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.
- Add potatoes and carrots, cover, and continue simmering until pork and vegetables are tender, about 20-25 minutes.
- Remove bay leaf. Adjust seasoning with salt and pepper. Serve hot, garnished with parsley.
