Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 cup water
Instructions
- In a blender, combine strawberries, sugar, lemon juice, and water. Blend until smooth.
- Strain the mixture through a fine-mesh sieve to remove seeds, pressing with a spatula to extract all liquid.
- Pour the strawberry mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 4 hours or until solid.
- To unmold, run warm water over the outside of the molds for a few seconds until popsicles release.
Tips
- For a creamier texture, replace half the water with plain yogurt or coconut milk.
- Store popsicles in the freezer for up to 2 weeks; wrap individually in plastic wrap to prevent freezer burn.
