Ingredients
1 cup granulated sugar
1 cup water
2 cups fruit puree or juice (e.g., strawberry, mango, lemonade)
1 tablespoon fresh lemon juice (optional, to balance sweetness)
Instructions
In a small saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat and let cool completely.
Once sugar syrup is cool, stir in fruit puree or juice and lemon juice (if using). Mix well.
Pour mixture into popsicle molds, leaving a little space at the top for expansion.
Insert popsicle sticks and freeze for at least 4 hours or until solid.
To unmold, run warm water over the outside of the molds for a few seconds, then gently pull out the popsicles.
Tips
For creamy popsicles, replace 1/2 cup of fruit puree with 1/2 cup full-fat yogurt or coconut milk.
Store popsicles in an airtight container or zip-top bag in the freezer for up to 2 weeks.
