Ingredients
10 cups popped popcorn (about 1/2 cup unpopped kernels)
1 cup granulated sugar
1/3 cup light corn syrup
1/3 cup unsalted butter
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon baking soda
Instructions
Line a large baking sheet with parchment paper and grease lightly with butter or non-stick spray. Place popped popcorn in a large bowl, removing any unpopped kernels.
In a medium saucepan over medium heat, combine sugar, corn syrup, butter, and salt. Stir constantly until butter melts and sugar dissolves, then bring to a boil without stirring.
Once boiling, attach a candy thermometer and cook until mixture reaches 250°F (hard ball stage), about 5-7 minutes.
Remove from heat and quickly stir in vanilla extract and baking soda (mixture will foam). Immediately pour over popcorn and stir with a greased spatula until evenly coated.
Let cool slightly until safe to handle but still warm. Grease your hands with butter or oil, then shape mixture into 3-inch balls, pressing firmly. Place on prepared baking sheet.
Let cool completely at room temperature until set, about 20 minutes.
Tips
For extra flavor, add 1/2 cup chopped nuts or candy pieces after pouring syrup.
Store in an airtight container at room temperature for up to 1 week.
If mixture becomes too hard to shape, microwave for 10-15 seconds to soften.
