  2. Reduce heat to medium. Add onion and bell pepper; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Stir in sofrito, tomato sauce, Sazón, oregano, cumin, and bay leaf. Cook for 2 minutes, stirring.
  4. Return chicken to pot. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  5. Add potatoes and olives. Continue to simmer, covered, until potatoes are tender and chicken is cooked through, about 20 minutes more. Adjust seasoning with salt and pepper.
  6. Remove bay leaf before serving. Serve over white rice.
