Ingredients
4 boneless, skinless chicken breasts (about 6 oz each)
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, cut into wedges for serving
Instructions
Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
In a small bowl, mix olive oil, minced garlic, smoked paprika, oregano, salt, and pepper to form a paste.
Rub the paste all over the chicken breasts. Let marinate at room temperature for 10 minutes.
Heat a large cast-iron skillet or griddle (plancha) over medium-high heat until very hot.
Cook the chicken for 4-5 minutes per side, until golden brown and cooked through (internal temperature reaches 165°F).
Remove from heat and let rest for 5 minutes. Serve with lemon wedges.
Tips
For extra flavor, marinate the chicken in the refrigerator for up to 2 hours.
Serve with a simple salad or grilled vegetables.
If you don't have a plancha, a heavy skillet works well.
