  1. In a small bowl, mix garlic, soy sauce, aji amarillo paste, cumin, oregano, oil, vinegar, salt, pepper, and paprika to form a paste.
  2. Pat the chicken dry with paper towels. Rub the paste all over the chicken, including under the skin and inside the cavity. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat oven to 375°F (190°C). Place chicken on a rack in a roasting pan, breast side up.
  4. Roast for 50-60 minutes, basting occasionally with pan juices, until internal temperature reaches 165°F (74°C) in the thigh.
  5. Let rest for 10 minutes before carving. Serve with french fries and salad.
