Ingredients
1 cup coarse yellow cornmeal (polenta)
4 cups water
1 teaspoon salt
2 tablespoons unsalted butter
1/2 cup grated Parmesan cheese (optional)
Instructions
In a large saucepan, bring the water and salt to a boil over high heat.
Slowly pour the cornmeal into the boiling water in a thin stream, whisking constantly to prevent lumps.
Reduce heat to low and cook, stirring frequently with a wooden spoon, until the polenta thickens and pulls away from the sides of the pan, about 25-30 minutes.
Remove from heat and stir in the butter and Parmesan cheese until melted and smooth.
Serve immediately as a soft, creamy polenta, or pour onto a baking sheet and let cool to firm up for slicing and grilling.
Tips
For extra creamy polenta, substitute half the water with milk or broth.
