Ingredients
1 kg (2.2 lbs) potatoes, peeled
1 small onion, peeled
2 large eggs
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
vegetable oil for frying
Instructions
Grate the potatoes and onion on the finest side of a box grater or using a food processor. Place the grated mixture in a clean kitchen towel and squeeze out as much liquid as possible into a bowl.
Let the liquid sit for a few minutes so the starch settles, then carefully pour off the watery top and add the starch back to the potato mixture.
In a large bowl, combine the potato-onion mixture with eggs, flour, salt, and pepper. Mix well until a thick batter forms.
Heat a large skillet over medium-high heat and add enough oil to coat the bottom (about 1/4 inch deep).
Drop spoonfuls of batter (about 1/4 cup each) into the hot oil, flattening them with a spatula to form thin pancakes.
Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
Repeat with remaining batter, adding more oil as needed. Serve hot.
Tips
Serve with sour cream, apple sauce, or sugar for a traditional touch.
Leftover pancakes can be reheated in a toaster or oven to restore crispiness.
