Ingredients
1 kg potatoes, peeled
1 onion, grated
2 eggs
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
200 g Polish sausage (kielbasa), diced
vegetable oil for frying
Instructions
Grate the potatoes using a fine grater or a food processor. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
In a large bowl, combine the squeezed potatoes, grated onion, eggs, flour, salt, and pepper. Mix well.
Stir in the diced kielbasa until evenly distributed.
Heat a generous amount of vegetable oil in a large skillet over medium-high heat.
Spoon about 1/4 cup of the potato mixture per pancake into the hot oil, flattening slightly with a spatula.
Fry for 3-4 minutes per side until golden brown and crispy. Drain on paper towels.
Repeat with remaining mixture, adding more oil as needed. Serve hot.
Tips
Serve with sour cream or applesauce.
Keep pancakes warm in a low oven while frying the rest.
