Ingredients
4 large bell peppers (any color)
1 tbsp olive oil
1/2 lb Italian sausage, casings removed
1/2 cup chopped onion
2 cloves garlic, minced
1 cup pizza sauce
1/2 cup cooked rice or quinoa
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tsp dried oregano
1/4 tsp red pepper flakes (optional)
Salt and black pepper to taste
Fresh basil for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. If needed, trim the bottoms so they stand upright.
In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook, breaking it up, until browned, about 5 minutes. Add onion and garlic; cook until softened, 3 minutes.
Stir in pizza sauce, cooked rice, 1/2 cup mozzarella, Parmesan, oregano, and red pepper flakes. Season with salt and pepper. Cook for 2 minutes, then remove from heat.
Stuff each pepper with the sausage mixture, packing lightly. Place peppers upright in a baking dish. Top with remaining 1/2 cup mozzarella.
Bake for 25-30 minutes, until peppers are tender and cheese is melted and bubbly. Garnish with fresh basil if desired.
Tips
For a vegetarian version, substitute sausage with crumbled tofu or plant-based meat.
Serve with extra pizza sauce for dipping.
