Ingredients
- 1 can (28 oz) whole peeled tomatoes, preferably San Marzano
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon sugar (optional, to taste)
- 2 tablespoons fresh basil leaves, chopped (or 1 teaspoon dried)
Instructions
- Heat olive oil in a medium saucepan over medium heat. Add garlic and cook until fragrant, about 30 seconds.
- Add the canned tomatoes, crushing them with your hands or a spoon as you add them. Stir in oregano, salt, pepper, and sugar if using.
- Bring to a simmer, then reduce heat to low. Cook uncovered for 15-20 minutes, stirring occasionally, until sauce thickens.
- Remove from heat and stir in fresh basil. Let cool slightly before using.
- For a smoother sauce, blend with an immersion blender or in a regular blender until desired consistency.
Tips
- Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
- Use immediately on pizza, or as a dipping sauce for breadsticks.
- Adjust seasoning to taste; add red pepper flakes for heat.
