Ingredients
1 lb pizza dough, at room temperature
2 tbsp olive oil
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp truffle oil
1 tbsp fresh thyme leaves
Salt and black pepper to taste
1 tbsp semolina or cornmeal for dusting
Instructions
Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes.
In a skillet over medium heat, heat olive oil. Add mushrooms and cook until golden, about 5 minutes. Add garlic and cook 1 minute more. Season with salt and pepper.
On a lightly floured surface, divide dough into 2 balls. Stretch each into a 12-inch round. Dust a pizza peel or parchment with semolina and place one dough round on it.
Spread half the mushroom mixture over dough, leaving a 1-inch border. Sprinkle with half the mozzarella and Parmesan.
Slide pizza onto hot stone and bake until crust is golden and cheese is bubbly, 10-12 minutes.
Repeat with remaining dough and toppings. Drizzle each pizza with truffle oil and sprinkle with fresh thyme before serving.
Tips
For a stronger truffle flavor, add a few shavings of fresh truffle before serving.
Serve immediately for the best texture and aroma.
If using a baking sheet instead of a stone, bake at 475°F for 12-15 minutes.
