Ingredients
- 2 cups cooked jasmine rice, chilled
- 1 cup fresh pineapple chunks
- 1/2 cup diced ham or cooked shrimp
- 1/2 cup frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1/2 teaspoon curry powder
- 1/4 cup roasted cashews
- 2 green onions, sliced
- Salt and white pepper to taste
Instructions
- Heat 1 tablespoon oil in a wok or large skillet over high heat. Add eggs and scramble until just set. Remove and set aside.
- Add remaining 2 tablespoons oil to the wok. Sauté garlic until fragrant, about 30 seconds.
- Add ham and cook for 1 minute. Add pineapple, peas, and carrots; stir-fry for 1-2 minutes.
- Add rice, breaking up any clumps. Stir-fry for 2-3 minutes until heated through.
- Drizzle soy sauce, fish sauce, and curry powder over rice. Toss to combine.
- Return scrambled eggs to wok. Add cashews and green onions. Toss briefly. Season with salt and white pepper. Serve immediately.
Tips
- Use day-old cold rice for best texture; fresh rice can be sticky.
- For a vegetarian version, omit ham and use tofu or extra vegetables.
- Garnish with additional cashews and cilantro if desired.
