  2. Make the filling: Mash the boiled potatoes. In a skillet, sauté onion in 2 tablespoons butter until golden. Mix potatoes, cheese, sautéed onion, salt, and pepper until smooth.
  3. Roll out dough on a floured surface to 1/8-inch thickness. Cut into 3-inch rounds using a cutter or glass.
  4. Place a heaping teaspoon of filling in the center of each round. Fold over into a half-moon, press edges to seal, and crimp with a fork.
  5. Bring a large pot of salted water to a boil. Drop pierogi in batches (do not overcrowd). Cook until they float, then 2-3 minutes more. Remove with a slotted spoon.
  6. In a large skillet, melt 2 tablespoons butter over medium heat. Add cooked pierogi and fry until golden on each side, about 3-4 minutes per side.
  7. Serve hot with sour cream.
