Ingredients
- 1 lb potatoes (about 3 medium), peeled and quartered
- 1 cup farmer's cheese or dry cottage cheese
- 1 small onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Boil potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.
- While potatoes cook, melt butter in a skillet over medium heat. Add onion and sauté until golden, about 5 minutes.
- Combine mashed potatoes, sautéed onion, and farmer's cheese. Season with salt and pepper. Mix well.
- Let filling cool completely before using to fill pierogi dough.
Tips
- For a smoother texture, press the filling through a ricer.
- Filling can be made a day ahead and refrigerated.
