Ingredients
1 cup fresh or frozen blueberries
1/2 cup granulated sugar
1/2 cup water
1 tablespoon lemon juice
1/4 teaspoon blue food coloring (optional)
Instructions
In a small saucepan, combine blueberries, sugar, and water. Bring to a boil over medium-high heat, stirring until sugar dissolves.
Reduce heat to low and simmer for 10 minutes, mashing blueberries occasionally with a spoon.
Remove from heat and stir in lemon juice. Let cool for 5 minutes.
Strain through a fine-mesh sieve into a bowl, pressing on solids to extract as much liquid as possible. Discard solids.
Stir in blue food coloring if desired for a brighter blue color.
Transfer syrup to a jar or bottle and refrigerate until cold.
Tips

Store in an airtight container in the refrigerator for up to 2 weeks.
