Ingredients
1 lb flank steak, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp vegetable oil
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 yellow onion, sliced into strips
2 cloves garlic, minced
1 tbsp freshly ground black pepper
1/2 cup beef broth
2 tbsp oyster sauce
1 tsp sugar
Instructions
In a bowl, combine sliced beef with soy sauce and cornstarch. Toss to coat and let marinate for 10 minutes.
Heat vegetable oil in a wok or large skillet over high heat. Add beef in a single layer and sear until browned, about 2 minutes per side. Remove beef and set aside.
In the same wok, add bell peppers and onion. Stir-fry for 2-3 minutes until crisp-tender. Add garlic and cook for 30 seconds.
Return beef to the wok. Add black pepper, beef broth, oyster sauce, and sugar. Stir-fry for 1-2 minutes until sauce thickens and coats everything evenly.
Serve immediately over steamed rice.
Tips
For extra tender beef, freeze the steak for 30 minutes before slicing.
Adjust black pepper to taste; use freshly ground for best flavor.
