Ingredients
4 ripe but firm pears, peeled, cored, and diced
1 large onion, finely chopped
3 tablespoons fresh ginger, grated
1 cup apple cider vinegar
1 cup brown sugar, packed
1/2 cup golden raisins
1 teaspoon mustard seeds
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
Instructions
In a large, heavy-bottomed pot, combine all ingredients. Stir well.
Bring to a boil over medium-high heat, then reduce heat to low and simmer, stirring occasionally, for about 45 minutes, or until the chutney has thickened and the pears are tender.
Remove from heat and let cool slightly. Transfer to sterilized jars and seal. Refrigerate after opening.
Tips
For a smoother chutney, mash some of the pears with a potato masher during cooking.
This chutney keeps in the refrigerator for up to 3 months.
