Ingredients
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon sambal oelek or Sriracha
- 1 clove garlic, minced
- 1/2 cup coconut milk
- 2 tablespoons water (optional, for thinning)
Instructions
- In a small saucepan over medium heat, combine peanut butter, soy sauce, brown sugar, lime juice, sambal oelek, and garlic.
- Whisk in coconut milk until smooth. Cook, stirring constantly, until sauce thickens slightly, about 3-5 minutes.
- Remove from heat. If sauce is too thick, whisk in water 1 tablespoon at a time until desired consistency.
- Taste and adjust seasoning with more lime juice, soy sauce, or sambal oelek as desired.
- Let cool slightly before serving. Sauce will thicken as it cools.
Tips
- Store in an airtight container in the refrigerator for up to 1 week.
- Reheat gently with a splash of water or coconut milk to restore consistency.
- Use natural peanut butter for a less sweet, more savory sauce.
